Saturday Night Chicken

Spatchcocked a chicken tonight for dinner.

I prepared the chicken with a “light” version of my competition bird. The chicken was injected and cooked on the Big Green Egg. No sauce but I’m happy with the color.

Results:

Our chicken was nice and juicy. The rub had a spicy bite with a touch of sweetness. I have been experimenting with cooking my competition chicken to a higher internal and have been very happy with the results.
